Guest guest Posted August 31, 2009 Report Share Posted August 31, 2009 Harvest Spiced Rice  1 tbsp. coconut oil or real butter 1 cup thinly sliced carrots 2 tbsps. finely chopped leeks 1/2 cup raisins 3/4 cup apple juice 2 tbsps. fresh lemon juice 2 tbsps. light brown sugar or honey 1 tsp. sea salt 1 tsp. minced fresh thyme 1/2 tsp. ground cinnamon 1/4 tsp. ground cardamom 1 tbsp. toasted pine nuts 2 cups sliced apples 3 cups cooked organic brown rice  Melt the coconut oil or ‘butter’ in large skillet on med heat. Add the carrots and onions, cook and stir 5 minutes or until tender-crisp. Stir in the raisins, juices, sugar, salt, thyme, cinnamon and cardamom. Reduce heat to low; cover. Simmer 10 minutes.
