It's delicious and a good way to use up that canned asparagus MAri Asparagus Portobello Pasta 2 (15 ounce) cans asparagus 1 (2.25 ounce) can sliced black olives 1/2 pound fettuccini or spaghetti pasta 1 tablespoon olive oil 3 large portobello mushrooms, or a container of small mushrooms sliced 1 (8 ounce) can peas, drained 2 teaspoons Italian seasoning 1 (6 ounce) can tomato paste 1/2 cup grated Parmesan cheese I added garlic powder and red pepper flakes to the mushroom mix Fill a large pot with water and the drained liquids of the asparagus and the olives; bring to a boil. Cook pasta for 8 to 10 minutes, or until al dente. Drain. Meanwhile, heat oil in a large skillet over medium heat. Saute mushrooms, peas, and Italian seasoning until mushrooms are tender. In a blender or food processor, puree asparagus, black olives, tomato paste and Parmesan. Transfer to a small saucepan, and heat through over medium-low heat. My name is Karla and I have been a vegetarian for about one whole week now, the week before that I was at OHI in San Diego, Ca. where all the food is raw. My children are adults(yeah!!!!) and my husband Mike and I have 2 bichons that keep us quite entertained and busy. Today was a big day for me in terms of cooking. I cooked my very first vegetarian meal and it was the Asparagus Portobello Pasta recipe submittted by Mari 84. Oh Mari, it was so delicious. I can't believe that it turned out so well on my first try. My husband, who has expressed no interest in being a vegetarian, is still raving about dinner tonight. I am so happy to have found this site. It will be a while before I can submit a recipe but I will eventually. Thank everyone that contributes.
