Guest guest Posted August 5, 2009 Report Share Posted August 5, 2009 Special Fresh Hummus 2 cups shelled chickpeas 4 tablespoons fresh lemon juice 1/2 teaspoon plain salt or Iodized salt 2 tablespoons olive oil 2 medium cloves garlic 1/2 teaspoon dry oregano or 1 teaspoon fresh 1/2 teaspoon ground cumin 2 tablespoons tahini Put chickpeas in a medium saucepan and cover with water. Add 1 tablespoon of the lemon juice and 1/2 teaspoon salt. Bring to a boil and cook until tender, about 20 minutes. Drain and place in food processor. Add other ingredients and pulse food processor until everything is chopped, then blend until smooth. If the mixture is too thick, add a little more olive oil until the desired consistency is reached.
