Paul Mushroom, Onion and Cheese Quesadillas 2 4 ounce cans mushroom stems and pieces, drained 1/2 can fried onions 1 to 2 cloves garlic, peeled and sliced 12 flour or corn tortillas 12 thin deli slices cheese, I like the pepper jack one 1 cup salsa, any type you like Heat oven to 450 degrees. Line two baking sheets with foil and spray with non-stick cooking spray. Combine mushrooms, onions and garlic in a small bowl; set mixture aside. Place 3 tortillas on each prepared sheet pan. Place one slice of cheese on each tortilla (trim slice to fit tortilla). Top each cheese slice with 1/3 cup mushroom mixture; spread evenly. Top quesadillas with another slice of cheese and tortilla. Spray the tortilla top with non-stick cooking spray and bake in oven for 5 minutes. Remove from oven, turn quesadillas over and bake another 5 minutes or until cheese is melted and tortillas are golden brown. Remove from oven, let cool 5 minutes and place on cutting surface.
