Guest guest Posted July 12, 2009 Report Share Posted July 12, 2009 Cream of Lentil Soup. serves 6 2 tsp vegetable oil 1 onion, chopped 2 leeks, chopped 2 cloves garlic, crushed 315 g, 10 oz green lentils 6 cups 2 1/2 pt veg stock or water 12 rocket leaves, roughly chopped 1 tbsp lemon juice 1/2 cup, 4 fl oz soy yogurt Heat the oil in a large pan and fry the onions, leeks and garlic for 5 minutes. Add the lentils and stock, bring to the boil and simmer for 30 minutes. Add the rocket and lemon juice and simmer for a further 5 minutes.
