Ripe Red tomato Soup. 1 tbsp veg oil 2 cloves garlic, crushed 2 fresh red chillies, finely chopped 2 red onions, chopped 4 spring onions, chopped 2 tbsp chopped fresh thyme or 1 tsp dried 60g sun-dried tomatoes, chopped 1 kg very ripe tomatoes, peeled and chopped 1 cup, 8 floz dry white wine 4 cups, 3/4 pint veg stock 2 tsp sugar 1/4 cup, 2 oz soy milk 2 tbsp chopped fresh basil Heat the oil in a large pan, add garlic, chillies and red onions cook for 5 minutes. Add spring onions, sun-dried tomatoes, thyme, tomatoes, wine and stock, cover and simmer for 45 minutes. Blend till smooth. Add the sugar, bring back to the boil and serve hot wih a sprig of fresh basil and a swirl of soy milk.
