Guest guest Posted July 12, 2009 Report Share Posted July 12, 2009 Lentil And Mushroom Salad: Serves 4 375 g, 12 oz red lentils 250 g 8 oz button mushrooms, halved 4 spring onions, diced diagonally 4 tbsp pumpkin seeds 250 g 8 oz grapes 1 yellow or red pepper, chopped 4 spinach leaves, shredded 2 cloves garlic, crushed 1 tbsp honey sub, maple syrup 2 tbsp soy sauce 3 tbsp taragon vinegar 2 tbsp vegetable oil 1/3 cup, 3 fl oz grape juice Bring a large saucepan of water to the boil. Add lentils and simmer about 30 minutes or until lentils are soft. Drain, rince under cold running water and leave to drain again. place lentils, mushrooms, sprin onions, seeds, grapes, peppers and spinach leaves in a large bow. Toss to combine. To make the dressing, put the syrup, garlic, soy sauce, oil, grape juice and vinegar in a screw top jar and shake to thoroughly combine. Pour the dressing over the salad and leave to marinate at room temperature for at least 3 hours before serving. For a complete meal, serve with herb bread.
