Guest guest Posted July 12, 2009 Report Share Posted July 12, 2009 Carrot And Orange Soup. serves 4 1 tbsp vegetable oil 2 leeks, finely chopped 6 large carrots, sliced 2 tbsp curry powder 1 tbsp finely grated lemon rind 1 cup, 8 fl oz orange juice 1 1/2 cups, 12 fl oz coconut milk 2 cups, 16 fl oz vegetable stock freshly ground black pepper 1/3 cups, 2 oz soy yogurt 100 g cashew nuts, roasted and chopped 1 tbsp chopped fresh mint Heat oil in pan and fry leeks for 5 minutes. add carrots, curry powder, lemon rind and oarange juice and simmer for 10 minutes, until carrots are soft. Stir in coconut milk and stock, bring to the boil and simmer for 10 more minutes. Blend till smooth, re-heat and serve with yogurt and sprinkled with mint and cashew nuts.
