So far my inspiration has come from the web and a few cook books I have such as, 'Almost Vegetarion' by The Australian Womens Weekly,'Mediterranean Cooking' by Nita Mehta's. The recipe I am going to share with you is from Mediterranean Cooking. Lentils with Bulgur Pilaf Ingredients 1 cup green lentils 3 cups water 1 cup bulgur 3/4 tsp salt 3 tbp olive oil 1 onion finely chopped 2 tsp minced garlic 1 tsp ground cumin seeds 1/2 tsp ground cinnamon 1/4 teaspoon black pepper a pinch grated nutmeg a pinch of clove powder 3 onions thinly sliced 1/4 chopped parsley for garnish 1. In a medium pot combine lentils with water. Bring to a boil.Lower heat and cover, and simmer until lentils are almost done but still firm, 15 to 20 minutes. 2.Add bulgur and 1/2 tsp salt. Remove from heat and cover.Let sit until the bulgur is tender and the water is aborbed. 20 to 25 minutes adding more water if the bulgur seems dry. 3. In a large pan, heat 2tbsp oil over medium high -heat. Add the chopped onion. Cook stirring until soft, 5 minutes. 4. Add garlic, cumin, cinnamon, remaining 1/4 tsp salt, black pepper. nutmeg and clove powder. Cook stirring for 1 minute. 5. Stir in bulgur and lentil mixture. Mix well to combine. Remove from heat. Set aside. 6. In a frying pan, heat 1 tbsp oil over medium heat. Add the sliced onions, cook, stirring occassionly until carmelized to a very rich dark brown colour, about 10 minutes. 7.Transfer the lentil and bulgur mixture to a serving bowl and top with carmelized onions.
