Guest guest Posted June 17, 2009 Report Share Posted June 17, 2009 Jalapeno Jack and Black Bean Quesadillas 1 15 ounce can black beans, rinsed and drained 1 7 ounce can whole kernel corn, drained 1 3 ounce can fried onions 12 flour or corn tortillas 12 thin deli slices jalapeno jack cheese Heat oven to 450 degrees. Line two baking sheets with foil and spray with non-stick cooking spray. Combine black beans, corn and onions in a bowl; set mixture aside. Place 3 tortillas on each sheet pan. Place 1 sliced of H-E-B Jalapeño Jack Cheese on each tortilla. Spread 1/3-cup black bean mixture over each quesadilla. Top quesadillas with another slice of cheese and tortilla. Spray the tortilla top with non-stick cooking spray and bake in oven for 5 minutes. Remove from oven, turn quesadillas over and bake another 5 minutes or until cheese is melted and tortillas are golden brown. Remove from oven, let cool 5 minutes and place on cutting surface.
