* *Parmesan Stuffed Mushrooms*

 

*Ingredients: *

1 1/2 cups - freshly grated Parmesan cheese

12 pieces - mushrooms, peeled

3/4th cup - finely chopped onion

2 cloves - garlic, crushed

3 tbsps- finely chopped red capsicum

1 1/2 tbsps - oil

5 tbsps - fresh breadcrumbs

2 tbsps - chopped parsley or coriander

1 tsp - amchoor powder to taste

1/4 tsp - red chilli powder

salt to taste

 

*Method*

 

1. Remove the stems of the mushrooms.

2. Keep aside the mushroom caps.

3. Chop the mushroom stems.

4. In a microwave safe bowl, combine the chopped mushrooms stems with the

garlic, red capsicum, oil and onion.

5. Cover with paper towels and cook on HIGH for 4 mins.

6. Combine the breadcrumbs, parsley and half of the cheese.

7. Add amchoor and salt to taste. Mix well.

8. Fill the mushrooms caps with the prepared breadcrumbs mixture.

9. Oil a microwave safe dish and place the stuffed mushrooms on it.

10. Cook on HIGH for 4 mins.

11. Sprinkle the remaining cheese over the mushrooms and place under

preheated grill until they turn golden in colour.
