Guest guest
ALOO PARATHA (Stuffed Potato Pancakes) Stuffing: 2 medium sized boiled Potatoes (makes 2 paranthas ) 1 small finely chopped Onion (optional) Coriander leaves finely chopped Small piece of Ginger (very finely chopped or grated) 1 or 2 green Chilies (finely chopped) as per taste Fennel Seeds 1/2 tea spoon Salt as per taste Red Chili powder and Garam masala as per taste Butter or Ghee (clarified butter) Preparation: * For the pancakes, prepare dough out of whole-wheat flour (atta) * For the filling - * Mash the potatoes. * Add all the stuffing items to mashed potatoes and mix it properly. * Make two medium size pancakes, add the filling to the one rolled pancake and cover it with the second one. * Now fuse the corners by pressing down with your thumbs and roll it slightly with a rolling pin. Once flat enough, put the aloo parantha in a pre-heated oven at 450-degree. Cover top oven grill with aluminum foil & Place Paratha over it for easy baking. * When top side is done change the side and keep a check (till properly baked) and light brown in color. * Spread butter over it (Optional). Serve aloo paratha hot with yogurt or pickles. Cheers Vikas
