Guest guest Posted June 6, 2009 Report Share Posted June 6, 2009 Indian Minted Potatoes and Cucumber 1 1/2 lbs. boiling potatoes, peeled, cut into 3/4 inch dice 1 large cucumber, peeled, seeded, cut into 3/4 inch dice 1/4 cup firmly packed chopped fresh mint leaves 2 tbsps. lemon juice 1 tsp. ground cumin 1 tsp. ground coriander 1/4 tsp. cayenne pepper, or to taste salt and freshly ground pepper to taste Boil the potatoes in salted water until just tender-do not over cook. Drain and cool in the refrigerator. Combine the potatoes and the remaining ingredients in a bowl and toss gently to combine. Serve slightly chilled or at room temperature. Makes 4 to 6 servings.
