Guest guest Posted June 2, 2009 Report Share Posted June 2, 2009 Herbed Cucumber and Mint Dip 1 medium cucumber 1 scallion, green and white parts, finely chopped 1 cup plain yogurt 3 tbsps. chopped fresh mint leaves 2 tbsps. olive oil 1/2 tsp. ground cumin cayenne pepper to taste salt and freshly ground pepper to taste Cut the cucumber in half lengthwise, scoop out and discard the seeds.
