Guest guest Posted June 1, 2009 Report Share Posted June 1, 2009 Red Lentil Chowder (vegan) 1 cup red lentils, rinsed 3 1/2 cups veggie broth 1 onion, chopped 2-3 garlic cloves, pressed 1 medium or 2 small red potatoes, peeled and diced 2 zucchini, diced (I used the spreckled zucchini) dash red pepper flakes dash cumin 1 tsp. drided chives salt & pepper to taste Place all in a sauce pan and bring to a boil, sinner on very low for 25- 30 minutes. Enjoy a bowl of hearty soup. Add more spice if you like. The original recipe had nothing in it, not even salt. I like my soup chunky so if you like you can puree with a handheld blender, blender or food processor. Through violence, you may 'solve' one problem, but you sow the seeds for another.
