Guest guest Posted May 31, 2009 Report Share Posted May 31, 2009 Summer Garbanzo Vegetable Curry in a Hurry 1 1/2 tablespoons curry powder 2 tablespoons olive oil 1 cup cut string beans, about 1 inch pieces 1 cup chopped red bell pepper 1/2 cup chopped onion 1 cup broth 1 medium-size summer squash, sliced or chopped 14 ounce can chickpeas, drained, rinsed 1/3 cup golden raisins 1 cup water 1 tablespoon butter 1/2 teaspoon salt, optional 2 cups cooked couscous or rice In large nonstick skillet, combine curry powder and oil Heat 2 minutes. Add beans, bell pepper and onion; cook until softened, about 2 minutes. Add just 1 cup of the broth, squash, chickpeas and raisins. Bring to boil; reduce heat. Simmer 5 minutes.
