Spicy Rice and Vegetables

 

1 cup mild chili peppers, diced

1 cup green bell pepper, diced

1 cup diced celery

1 cup chopped onion

4 tablespoons butter

1 tablespoon honey

1 1/2 cups brown rice

3 cups water

1 apple, chopped

1/2 cup chopped toasted almonds

 

Saute the peppers, celery and onion in the butter over low heat. Add the

rice and continue to saut & eactue; until onions are clear.

Add water and honey, and bring to a boil. Turn heat to low, cover, and

simmer for 45 minutes. During last 5 minutes of cooking, add apple and

almonds. Yields about 6 servings.
