I enjoy cooking simple one pot meals, whereas my husband can use every pot in the house for a meal! This is my favourite one pot meal: Risotto 1 onion 1 clove garlic 1 carrot 1 zucchini 1 stock celery 1.5 litres vegetable stock 300 grams arborio risotto rice (about 1 and 1/4 cup) 1/2 cup of white wine 1 handful of red lentils oil Either boil water in the kettle (and use a vegetable stock cube), or heat up some stock in a pot on the stove. Chop all your vegetables as fine as possible, heat oil in a pot. Put all your vegetables in and sauté them for a few minutes. If using a stock cube, put this in and add your rice and lentils. Stir it around a few minutes, then add your wine - let the rice absorb the wine. Then start adding water bit by bit (or stock if you didn't use a stock cube). As you add some water, wait for the rice and lentils to absorb the liquid and then add more liquid and continue to stir. This will take about 20 minutes for the rice to get done. For some spice, add some fresh sage and marjoram leaves after it's done. For some bite, sprinkle with crushed chili, or even add chili powder to the dry ingredients before adding the wine.
