I found these 2 recipes Kate I hope its what ur looking for.

Veggie Griddle Cakes

 

You can replace the green pepper with a jalapeno pepper for some heat and you

can also add mushrooms.

 

2 eggs

1/2 cup vanilla fat-free yogurt

1 1/4 cups biscuit baking mix

1 tablespoon vegetable oil

1 onion, diced

1/2 cup chopped green bell pepper

1/2 cup chopped red bell pepper

1 teaspoon chopped fresh parsley

1 small tomato, diced

 

In a medium bowl blend eggs, yogurt and biscuit baking mix.

Heat oil in a medium skillet over medium heat. Saute onion, green bell pepper

and red bell pepper, until tender; stir into batter.

Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop

the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown

on both sides and serve hot, garnished with parsley and tomatoes.

 

Coconut Griddle Bread-Sri Lanka

 

1 1/2 cups grated fresh coconut or thawed grated unsweetened coconut

2 cups all-purpose flour or wheat flour

1 teaspoon salt

1 1/2 cups warm water

2 tablespoons oil, for greasing griddle

 

Combine the coconut, flour and salt in a medium bowl. Make a well in the center,

pour in the water, and mix gently. The consistencty should be somewere between

that of batter and bread dough.

Heat a large cast-iron skillet or a griddle over medium-high heat. Grease with

the shortening or oil. Drop 4 heaping tablespoonfuls of batter onto the hot

surface, immediately flattening them with a spatula to 1/4 inch thickness.

Cook for 3 to 4 minutes, until browned on the bottom. Turn and cook 3 to 4

minutes longer. Repeat with remaining batter. Serve hot.

Griddle Cookin'

 

 

 

Hi everyone,

Soon I will be moving into my new home, where I will have no stove

for a while. I plan to take my electric griddle with me so I can make

pancakes and eggs for breakfasts, but methinks that won't be

satisfying night after night. I need ideas. Have you got any

favourite recipes for griddle cookin'?
