Guest guest Posted April 21, 2009 Report Share Posted April 21, 2009 Garbanzo Fireballs 1 tablespoon olive oil 2 cups cooked garbanzo beans 1/2 cup chopped onions 1 tablespoon minced garlic 1/2 teaspoon salt plus 1 teaspoon 3 teaspoons chili powder 1 tablespoon Cajun blend 2 teaspoons lemon concentrate 1/2 cup vegetable stock 1 teaspoon hot sauce Soak beans overnight by putting in a pan and covering with 2 inches of fresh water. The next morning drain, put in 10 cups of fresh water, 1 teaspoon salt and cook beans approximately 3 hours until done. Preheat saucepan or wok and add olive oil, garlic and onions. Cook over low heat until clear. Add garbanzo beans, 1/2 teaspoon salt, pepper, chili powder, lemon juice, hot sauce and stock. Add spices slow and cook over low heat to thicken the juice with the chili powder. You want the beans and juice to steep. Good as a side dish for a little zing.
