Dill Pickled Okra

2 pounds young okra

celery leaves

4 cloves

4 sprigs dill

2 cups water

2 cups white vinegar

4 tsps. salt

Scrub okra and pack whole pods into clean, hot jars. In each jar insert a few

celery leaves, 1 garlic clove, peeled, and 1 sprig of dill.

Bring water, vinegar, and salt to a boil. Pour the boiling liquid over the okra.

Seal and process 10 minutes in simmering hot water.

Let okra stand for about 1 month before using.

Yields 4 pints.

I think it's " suwa, " but you might want to double-check me on that.

Here's a link (about 3/4 down the page): http://tinyurl.com/delmvg . Do

you know about this glossary?

http://www.recipedelights.com/glossary.htm They didn't have " dill "

listed, but I've used it to do translations (the other way) and found it

helpful before. Hope this helps! Peace, Mo
