Guest guest Posted April 11, 2009 Report Share Posted April 11, 2009 Indian Green Beans Walnuts and Coconut 1 pound fresh green beans 1 1/2 cups fresh coconut, grated 1/2 cup walnuts, chopped 1 small ginger root, peeled and chopped 1/4 tsp, cumin seeds 1/4 chilli powder 1 tsp tomato puree salt oil for frying Top and tail the beans and cut into 1 1/2 inch lengths. Combine green beans, walnuts, ginger root, and cumin seeds in a skillet with a small amount of oil, cook for 5 minutes. Add tomato puree, salt and enough water to cover the beans. Cover the pan and simmer for ten to fifteen minutes or until the beans are tender but not too soft. Add more water if necessary, or If there is still a lot of water in the pan when the beans are cooked, remove the lid and turn up the heat to allow the water to evaporate.
