Guest guest Posted March 26, 2009 Report Share Posted March 26, 2009 Asian Spaghetti with Cucumber and Spicy Peanut Sauce 1/4 cup smooth peanut butter 1 tbsp. oy sauce 1 tbsp. fresh lemon juice 1 clove garlic, minced 1/4 tsp. dried hot pepper flakes, or to taste 1/4 tsp. sugar 1/4 cup hot water 6 ozs. spaghetti 1 cucumber, peeled, halved, seeded, cut diagonally into 1/8 " slices 1/3 cup thinly sliced scallion salt and pepper, to taste Use a blender to mix peanut butter soy sauce, lemon juice, garlic, pepper flakes, sugar and water until the sauce is smooth. In a kettle of boiling salted water, boil the spaghetti until it is just tender. Drain and rinse briefly under cold water. Drain well, transfer to a bowl.
