Guest guest Posted March 16, 2009 Report Share Posted March 16, 2009 Baby Potatoes Coated With Almonds Recipe By : Serving Size : 30 Preparation Time :0:00 Categories : *Appetizers Nuts Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 pounds baby new potatoes 2 tablespoons almond oil 2 jalapeno peppers -- seeded and minced 2 tablespoons grated ginger 1/2 cup powdered almonds 2 tablespoons cilantro -- minced salt and pepper lemon juice Steam potatoes until just tender, about 15 minutes. Set them aside. Combine oil, peppers, ginger, almonds and cilantro in a large bowl. Add potatoes and toss until well coated. Season with salt and pepper and sprinkle with lemon juice. Spear potatoes with cocktail sticks; arrange on a platter. Serve hot, or keep warm in a 250 degree oven for up to 30 minutes.
