Guest guest Posted March 10, 2009 Report Share Posted March 10, 2009 Dhal (Spiced Lentils) 1 1/4 cups red lentils 2 cups boiling water 1 bay leaf 2 tbsps. olive oil 1 onion, peeled and sliced 2 cloves garlic, peeled and minced 1 tsp. turmeric 1 tsp. coriander 1 tsp. cumin 1/2 tsp. ground ginger 1/2 tsp. cinnamon Wash and drain lentils. Place in a slow cooker. Add bay leaf and boiling water. Cover and cook on high for about 2 - 2 1/2 hours or until the lentils are tender and have absorbed all the water. If there is a little water remaining, remove the lid for 15 minutes or so and stir occasionally. About 20 minutes before serving, heat the oil in a skillet and sauté the onion and garlic until soft. Add the turmeric, coriander, cumin and ginger and continue to cook for a few minutes, stirring frequently. Stir the spice and vegetable mixture into the lentils and season with salt and pepper.
