It was good served over rice, my 14 year old liked it and had seconds. * Exported from MasterCook * Chilli-Yogurt Mushrooms Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 ounces ghee -- (55 g) or 4 tablespoons vegetable or groundnut oil 2 large onions -- chopped 4 large garlic cloves -- crushed 14 ounces canned chopped tomatoes in juice -- (400 g) 1 teaspoon ground turmeric 1 teaspoon garam masala 1/2 teaspoon chili powder 1 pound chestnut mushrooms -- plus 10 oz (750 g) thickly sliced pinch sugar 4 ounces natural yogurt -- (125 ml) salt chopped fresh coriander and coriander sprigs - - to garnish Method - Melt the ghee in a preheated kadhai, wok or large frying pan over a medium-high heat. Add the onions and cook, stirring frequently, for 5 to 8 minutes until golden. Stir in the garlic and cook, stirring, for a further 2 minutes. Add the tomatoes with their juice and stir well, then add the turmeric, garam masala and chili powder and cook, stirring, for 3 minutes. Add the mushroom, sugar and salt to taste and cook, stirring frequently, for 8 minutes, or until they have given off their liquid and are soft and tender. Turn off the heat, then stir in the yogurt, a little at a time, beating vigorously to prevent it curdling. Taste and adjust the seasoning, if necessary. Sprinkle with coriander to garnish and serve immediately.
