Two Bean Tamale Pie • 1 TBSP olive oil • 1 onion - diced • 2 cloves garlic - minced • 1 large can diced tomatoes, drained • 1 15oz can pinto beans - drained, rinsed • 2 15oz cans black beans - drained, rinsed • 1 4.5oz can of chopped green chilies • 1 T chili powder • 1 chopped chipotle in adobo sauce • 1 tsp cumin • 2 boxes cornbread mix - mixed according to package directions • 4oz grated cheddar • 4 green onions - chopped • 2 T cilantro snipped Preheat your oven to 425F. Heat olive oil in a pan over medium heat and add the diced onion. As the onion gets soft add garlic. Add the tomatoes, beans, cumin, chilies, chipotle, and chili powder. Remove from heat and spoon into a greased casserole dish. Prepare cornbread mix according to directions, stirring in green onion, cilantro, and grated cheese. Spread evenly over the bean mixture. Bake for 30 minutes or until the cornbread is done. Garnish with additional cheese, cilantro, and sour cream. Makes enough to fill large Pyrex casserole dish. Note: Be careful when buying cornbread mix as many have lard in them. I think that I typically buy Martha White which doesn't have lard.
