Curried Squash Soup

Curried Squash Soup

 

1 cup celery, diced

2 cups leeks, diced

1 cup carrots, diced

4 cups yellow summer squash, sliced

1/4 cup fresh parsley, minced

2 large potatoes

3 larges stems broccoli

1 tbsp. curry powder  (I use hot curry)

broth

garlic powder

3 tbsps. Italian herb seasoning

2 crisp apples

sour cream

 

Important to cook each vegetable separately! Cook vegetables (boil or steam)

till tender. Process all to a fine mince. Do not puree. Mix all together. Add

enough broth for a nice consistency. Add seasonings to taste. Let stand 1 day in

the refrigerator. Second day: Heat (taste and correct seasoning). Serve with

chopped apple and sour cream.
