Guest guest Posted January 22, 2009 Report Share Posted January 22, 2009 Easy Steamed Turmeric Rice 1 1/4 cups white or brown basmati rice, thoroughly rinsed 2 3/8 cups water 1 tablespoon freshly squeezed lemon juice 1/2 teaspoon turmeric powder 2 to 3 dried hot peppers 1/4 teaspoon whole cloves 1/4 teaspoon whole black peppercorns 1/2 teaspoon salt (or to taste) 1/3 cup finely sliced tops of green onions, or freshly minced chives Soak rinsed rice in water for 30 minutes. Add all but scallions and bring to a boil over high heat. Reduce heat to very low, cover and simmer until rice is tender and liquid is absorbed (about 10 to 15 minutes for refined white basmati, and 20 to 25 for whole brown basmati).
