Guest guest Posted January 5, 2009 Report Share Posted January 5, 2009 Garlic Baked Jalapeno Bites 2 tbsps. olive oil 8 garlic cloves, minced 1/2 cup minced red onion 1/2 tsp. sea salt 1/2 cup finely diced red pepper 1/4 cup pine nuts (sub with chopped almonds if you like) 1 cup grated mozzarella or soy cheese 12 large jalapeno peppers Heat oil in a medium skillet. Saute garlic, salt, and pepper until garlic is golden. While garlic is saute, spread pine nuts on a cookie sheet and toast at 375 degrees for about 5 minutes. Stir toasted pine nuts into garlic mixture. Remove form heat. Add soy cheese and stir until well mixed. Slice each pepper lengthwise and stuff with cheese mixture. Bake at 375degrees in a glass casserole for about 10 minutes, or until peppers are tender and cheese is bubbly. Hot and spicy, these south of the border taste treats make perfect party appetizers.
