Zena Rotel Tomatoes - Homemade Copycat Recipe Make your own Rotel Tomatoes to suit your taste. You can make it hot or mild. 1 1/2 quarts peeled chopped seeded tomatoes (about 4lbs) 12 jalapeños or hot chili peppers, diced 1 teaspoon salt Place in 4 quart saucepan, and simmer until reduced to 1 quart. (Measure 1 quart water into saucepan in advance, and mark on outside of pan, to help you judge). The cans at the grocers are 10 oz in size, so freeze in 1 cup portions. This way you can adjust the hot peppers to suit yourself, and making small batches is so easy! Remember, freezing makes the peppers hotter. Guest guest Posted December 5, 2008 Report Share Posted December 5, 2008 Hi Zena: This is a wonderful idea - in season i stock up and spend a whole day making up almost the same recipe - i freeze mine in 8 oz plastic cups then top them off with a little water after they are frozen (about the only thing i use anything plastic for)... then it is so easy to take one out, run some warm water on it, and use it - i see you like stuff hot! I'm right with ya.
