Guest guest Posted November 2, 2008 Report Share Posted November 2, 2008 Spicy Sweet Potato Unfries 4 medium to large sweet potatoes, unpeeled 2 tbsps. olive oil 1 tsp. sea salt 1 tsp. white pepper 1 tbsp. curry powder 1/2 to 1 tsps. cayenne pepper 1. Preheat oven to 375 degrees. Scrub sweet potatoes and cut in half. Cut each half into 1/4 " strips. In a medium bowl, combine olive oil, salt, pepper, curry powder, and cayenne pepper. Mix well. 2. Add sweet potato strips to olive oil mixture and stir with hands until sweet potatoes are evenly coated. Spread on a cookie sheet and bake at 375 degrees until tender. Serve hot. 3. Baked, not fried, this sweet and spicy appetizer or snack is a low fat, nutrient packed alternative to plain old French fries. Serves 6 to 8.
