Guest guest Posted October 22, 2008 Report Share Posted October 22, 2008 1 soup cube (I like mushroom by Harvest Sun) 2 cups water 1 cup coined carrots 1 can lentils (or aprox 575 ml of soaked, pre-cooked lentils) 1 large can diced tomatoes (or aprox 1L diced tomatoes with juice) 1 tsp garam masala 3 cloves garlic, crushed and chopped Humus for garnish In a large pot; water, carrots, garlic. With heat on high, bring to a rolling boil, reduce heat to medium high and add rinsed tin of lentils, as well as the whole tin of tomatoes, and garam masala. Cook while stirring for another 15 - 17 minutes. Serve with humus and pepper on top. You can add almost any other vegetable to this soup (though if adding long-cooking veggies like potatoes or yam, make sure to have steamed them first), or change the spices for a different taste.
