Cheesy Potatoes with Hot Sauce

 

2 1/4 lbs. potatoes, peeled and cut into 1 inch cubes

1/2 lb. cream cheese

1/2 lb. lite sour cream

2 eggs

3/4 cup grated Parmesan cheese

1/4 tsp. hot red pepper sauce

2 cups shredded cheddar cheese

 

Place potatoes in a steamer basket over boiling water. Cover pan and steam 12 to

15 minutes or until tender. Drain. Preheat oven to 350 degrees. Combine next 5

ingredients and salt and pepper to taste in a food processor. Process until

smooth. Add cooked potatoes and process until just combined. Add half the cheese

and mix thoroughly. Transfer to a buttered baking dish and bake 20 minutes.

Sprinkle remaining cheese over top and bake another 10 minutes until cheese is

melted.

Serves 12.
