Sweet potato apple pie

Sorry, vegans, but this one's just not very easy to veganize.

Title:SWEET POTATO APPLE PIE

4 c. mashed sweet potato, homebaked or canned

2 c. leftover cooked apples -OR- canned apple pie filling,

heated and excess liquid drained off

2 ready-made or homemade pie shells

1 1/2 c. heavy cream

1/2 stick (2 oz) butter, softened

3 large eggs

1 1/ 2 tsp. allspice

1 c. sugar

2 tsp. vanilla

1 rounded tsp. lemon or orange zest

 

Heat oven to 350F. Bake pie shells 5 minutes and set aside.

 

If using canned sweet potato, heat through on stovetop or in microwave,

drain and mash. If using homebaked, scoop out pulp and mash while still

very warm.

 

Add softened butter and stir in. Add eggs and mix well. Thoroughly mix

in vanilla, citrus zest, allspice, and sugar, in that order. Fold in

cream.

 

Pour apples into pie shells and arrange evenly Pour sweet potato mixture

over apples evenly, spreading with spatula. Bake in pre-heated oven at

350 degrees for 30 minutes. Pie is done when center is set.

 

Let stand at room temperature for about 30 minutes before serving.

Top with whipped cream if desired. This pie is outstanding cold!

 

OPTIONS:

1. I'm told you can blend the apples and sweet potato mixture together

with a mixer set on " high " , or presumably in a blender, in batches.

 

2. Sprinkle currants or raisins over the apple layer.

 

3. Sprinkle top of whipped cream with currants or (for Samhain)

pomegranate seeds in whatever pattern you like.

 

4. Leave a piece of pie out for the Beloved Dead, and for the wild creatures

that share the land with you.
