Sicilian egg and pepper sandwich

Remember on The Sopranos how the old guys sometimes ordered egg and pepper

sandwiches? It's a Sicilian thing, and it's fairly fast, super-easy and

really,

really good. 'Fact, I think it's one of the world's best

sandwiches. Sorry,

vegans, egg substitutes won't work here.

Title: SICILIAN EGG AND PEPPER SANDWICH

Two or three sweet frying peppers--

banana (non-hot kind), Cubanelle, or Italian type.

(Only use a bell pepper if you can't easily get anything

else.)

One or two cloves garlic

Half a medium-small onion

2 eggs (cage-free if you can)

Canned marinara or spaghetti sauce

Salt and pepper

about 2 Tbsp. olive oil

Pizza-type red pepper flakes (optional but good!)

 

Quarter the peppers lengthwise and remove seeds (or if using bell pepper,

cut in strips.) Slice the onions, don't chop them. Split the garlic

clove(s).

 

Heat oil in a small skillet with a cover over high heat. .Fry the

garlic for only

about a minute--just till the oil is really fragrant with it. Remove

garlic so it

doesn't get bitter, and add peppers and onion.

 

After cooking over high heat for about three minutes, stirring frequently,

lower the heat to medium, and cover the pan. Fry, stirring every

couple of

minutes, till they're both very soft. (Keeping the lid on most of the

time is

so that the veggies sorta steam as well as frying.) The onions may

start to

color.

 

Remove veggies to a bowl. Fry the eggs any way you like, just not

runny.

Salt and pepper them to taste.

 

Split a big Italian roll or lay out some dense-textured bread. (Wimpy

store-type

white bread falls apart. Put the eggs on it and pile on the fried

veggies. Spoon

sauce over that--but not so much that you can't taste anything but sauce.

Sprinkle with pepper flakes if desired.

 

Serves one; eat it before it gets cold.

Hi Rain

Am watching a re-run of the Sopranos here in Mexico City and i

will listen out for the egg pepper sandwich now when they

order, going to try this recipe thanks.
