Guest guest
*Despite the fact that this chart from the U.S. Department of Agriculture has been around for years, many people still say to folks who don't use alcohol, " Oh, don't worry about the booze in this dish, it'll all cook off. Guest guest
So, what would be the % of alcohol left when used in sauteing? I don't see that in the list. I see alcohol added to boiling water, but not alcohol used in sauteing. Guest guest
If it isn't boiled, there is even more left. Depending on how long you sauté with it (sautéing is usually quick) there could be as much as 50% left.
