I have a few ways of doing it, in tomato sauce i add 1/2 teasp chilpote 1 tablespoon brown sugar and a bit of chil powder. Its great in veggie cooking. I found the best source of chilpote powder that is fresh is thru the spice barn on line (its in ohio) they ship fast and are wonderfully fresh.. The jamacian jerk i got from them (powdered) was so strong when i gave it a sniff almost knocked me off my feet..
