Guest guest Posted August 21, 2008 Report Share Posted August 21, 2008 Pepper Dressing Ingredients: 1 c. textured vegetable protein (TVP) 2 tbs. oil 4 large bell peppers, minced (any color or combination of colors) 1 medium onion, minced 5 green onions, minced 1 tsp. salt 2 tsp. paprika 1/8 tsp. cayenne 3/4 c. water 1 lb fresh mushrooms, thinly sliced 2 tbs. oil 5 c. cooked brown rice 1 jalapeño pepper, finely shredded Directions: Pan fry the TVP in 2 tablespoons of oil until it begins to brown. Add the bell peppers, onions and seasonings, and sauté for 10 minutes, stirring often. Add water and simmer for 20 minutes, stirring often. Sauté the mushrooms in 2 tablespoons of oil until they begin to brown, about 15 minutes. Add the mushrooms, rice and jalapeño to the TVP mixture, and stir well. Heat on very low heat until the rice is hot throughout, and serve. Serves 8 268 Calories, 9 gm protein, 40 gm carbohydrates and 7 gm fat.
