Guest guest Posted July 18, 2008 Report Share Posted July 18, 2008 * Exported from MasterCook * Broccoli Slaw with Raisins and Crystallized Ginger - 3 pts, Carbs 13g, Fiber 1g Recipe By :The PDQ (Pretty Damn Quick) Vegetarian Cookbook by Donna Klein Serving Size : 5 Preparation Time :0:00 Categories : LowCal (Less than 300 calories LowerCarbs Quick Spicy Veggie WW Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/3 cup reduced fat mayonnaise -- or soy mayonnaise 2 tablespoons rice vinegar 1/8 teaspoon ground ginger 1/4 teaspoon salt -- or to taste 1/8 teaspoon freshly ground black pepper -- or to taste 1/3 cup dark raisins 3 tablespoons tiny crystallized ginger pieces 8 ounces broccoli slaw mix 1/2 cup sliced almonds -- and/or unsalted sunflower seeds, for garnish (optional) In a large bowl, whisk together the mayonnaise, vinegar, ground ginger, salt, and pepper. Stir in the raisins and crustallized ginger. Let stand 10 minutes at room temperature to allow the raisins and crystallized ginger to soften. Add the broccoli coleslaw to the bowl and toss well to combine with the dressing. Cover and refrigerate a minimum of 1 hour, or overnight. Serve chilled, garnished with the nuts and/or seeds, if desired. If broccoli slaw is unavailable, 4 cups of ready-cut broccoli florets can be substituted. Crystallized ginger can be found in the spice aisle of most well-stocked supermarkets. For a vegan dish, soy mayonnaise can easily replace the regular variety.
