Guest guest Posted July 18, 2008 Report Share Posted July 18, 2008 * Exported from MasterCook * Sweet and Sour Eggplant Sauce - 7 pts Recipe By : Serving Size : 10 Preparation Time :0:00 Categories : Low Fat (less than 15%) Quick Spicy Veggie WW Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 tablespoons sesame seeds 2 tablespoons roasted sesame oil 1 medium onion -- chopped 3 medium garlic cloves -- minced 1/2 teaspoon dried red pepper flakes 2 medium eggplants -- (about 2 pounds), chopped 2 medium yellow bell peppers -- chopped 1/2 cup tomato puree 1 1/2 teaspoons ground ginger 3 tablespoons soy sauce 3 tablespoons cider vinegar 3 tablespoons honey 1 tablespoon arrowroot powder -- or cornstarch, if allergic 1/2 cup fresh cilantro -- minced 1 1/2 pounds dried pasta -- buckwheat soba or linguine Toast the sesame seeds and set aside. Heat the oil and 2 tablespoons of water in a high-walled skillet and saute the onion, garlic, and red pepper flakes a few moments. Stir in the eggplant and bell peppers. Saute over low heat about 20 minutes, stirring frequently. The vegetables should become limp but not extremely soft. Meanwhile, bring several quarts of water to a boil. Whisk together 1 1/2 cups water, the tomato puree, ginger, and soy sauce. Add to the skillet and simmer, covered, 10 minutes. Cook pasta until al dente and drain well. (If using buckwheat soba, cook a bit past the al dente stage - until fairly soft, but not mushy.) Whisk the vinegar, honey, arrowroot powder together in a small bowl. Add the vinegar mixture to the vegetables, turn off the heat, and stir and turn a few moments until the sauce thickens. Make a bed of the pasta on a platter or in a shallow bowl, arrange eggplant sauce on top, and sprinkle with cilantro and sesame seeds. Serve very hot.
