Guest guest Posted July 14, 2008 Report Share Posted July 14, 2008 This is something I made a few days ago. It is vegetarian, even though I am pescatarian. It is not vegan. It is TNT and, as it was devised by me, owes no thanks to anyone else. Orzo with Tahini and Olives Ingredients 2 cups tahini sauce, homemade or store bought 1/2 cup olive oil 1/4 - 1/3 cup lemon or lime juice 2 cups pitted olive (type--your favorite; I like plain black olives, but any kind you favor will work fine) 1/2 tb dill weed 1 tb minced garlic 1/2 cup white wine fresh ground black pepper to taste one box orzo 1/2 cup pitted olives, your favorite type, in addition to the other olives, sliced. Put the first 8 ingredients in a food processor or blender. Turn it into a chunky sauce. You can increase and decrease amounts as pleases your palette. This is how I made it. At the same time, cook a box of orzo for 5-7 minutes. Be sure to put some salt and olive oil in the water. Drain, but do not rinse the orzo. Mix the sauce into the orzo. If you want a thinner sauce, you can add olive juice (if you used canned olives) or additional white wine to control the thickness of the sauce. My kids like the sauce very thick. I prefer it thin. It's just a matter of taste. I hope you all enjoy my recipe.
