Thai Spicy Cucumber Salad

 

Preparation Time: 20 Minutes

Servings: 8

 

Ingredients (Salad):

 

½ c. Red Onion, chopped

2 large (4 cups) Cucumbers, cut in half lengthwise, seeded, cut into

¼ " slices

2 tbs Shallot or Green Onion, finely chopped

1 tsp. Red Chili Pepper, finely chopped

1 tsp. Yellow Chili Pepper, finely chopped

 

Ingredients (Dressing):

1/3 c. Rice Vinegar

1 tbs. Sugar

½ tsp. Salt

2 tbs. Dark Sesame Oil

 

Other Ingredients:

 

¼ c. Fresh Cilantro, Chopped

 

Directions:

 

1. In large bowl combine all salad ingredients; set aside.

2. In a 1 cup glass measuring cup combine all dressing ingredients;

stir until sugar and salt dissolve. Pour over salad; toss well to

coat. Stir in cilantro.
