Guest guest Posted June 30, 2008 Report Share Posted June 30, 2008 Naan with Spicy Fried Onions (india) 4 cups all purpose flour pinch of salt 1/2 tsp. baking powder 1/4 tsp. baking soda 1 tsp. sugar 1 egg 5/8 cup plain yogurt 4 tbsps. milk 2 tbsps. vegetable oil 2 tbsps. butter, melted For the spicy onions: 2 tbsps. vegetable oil 2 onions, thinly sliced 2 tsps. garam masala 1/2 tsp. sugar 1/2 tsp. table salt Preheat the oven to 425 degrees. Sift the flour, salt, baking powder, and baking soda into a bowl. Stir in the sugar. In a separate bowl, whisk together the egg, yogurt, milk, and oil. Pour into the flour mixture and bring together to make a soft dough. Knead briefly, cover with oiled plastic wrap and set aside for 15 minutes. For the spicy onions, heat the oil in a pan and cook the onions with the garam masala, sugar and salt for 15 minutes until golden brown. Roll the dough out into a large rectangle. Using your fingers, press the dough into a jelly roll pan. Scatter over the spicy onions, pressing them into the surface of the dough with the back of a spoon.
