Guest guest Posted June 18, 2008 Report Share Posted June 18, 2008 South Of The Border Pie 1 cup onion, chopped 1 tablespoon oil 1 teaspoon chili powder, up to 2t 1 teaspoon cumin 1/2 teaspoon garlic powder 1/4 teaspoon salt 1 15 ounces ca red kidney beans, drained 1 1/2 cups cooked brown rice 1 cup cheddar cheese, shredded 3/4 cup milk 2 eggs, beaten In saucepan, cook onion in oil. Stir in chili powder, cumin, garlic, and salt. Cook 1 minute. Cool. Stir in beans, rice, cheese, milk, and eggs. Spray a 10 " microwave-safe pie plate with nonstick spray. Add rice mixture. Cook, uncovered, 50% power, 22 to 24 minutes or until center is just set, giving dish a quarter turn, twice. Let stand 10 minutes. Garnish with chopped green pepper and serve with salsa if desired.
