Guest guest Posted April 11, 2003 Report Share Posted April 11, 2003 This one is very quick and very good: 2 cups water 1 cup cooked beans [best if cooked soft so that they bleed starch, and are spicy with pepper, garlic and onions -- I have these on hand in a big stock pot at all times! ] 1/2 cup cooked corn or mixed vegetables 2-6 tablespoons of mild salsa -- to taste Put all the above in a pot and bring to a boil, turn down heat. Add 1 cup of pasta, cooked rice or ramen noodles (or a mix) Ready in just a few minutes. Guest guest Posted June 8, 2008 Report Share Posted June 8, 2008 Spicy Vegan Gazpacho Soup Ingredients: * 3 cups tomato or vegetable juice * 1 onion, diced * 3 tomatoes, chopped * 1 bell pepper, any color, diced * 2 cloves garlic, minced * 1 cucumber, diced * 2 tbsp lemon juice * 2 tbsp red wine vinegar * 1 tsp tarragon * 1 tsp chopped fresh basil * 1/4 tsp cumin * 1/4 tsp cayenne pepper, or to taste * 1/4 - 1/2 tsp hot sauce, to taste * 2 tbsp olive oil Preparation:Mix together all ingredients well. Place half of the mixture in a blender or food processor and process until smooth. Recombine. Chill thoroughly before serving.
