Guest guest Posted June 7, 2008 Report Share Posted June 7, 2008 Curried Couscous Pilaf 3 ounces uncooked couscous 1 tbsp. plus 1 tsp. olive or vegetable oil 1/2 cup each shredded carrot, diced red pepper, and sliced scallions 1/3 cup plus 2 tsps. golden raisins 1/2 cup apple juice, no sugar added 1/2 medium tomato, diced 1 tsp. curry powder In saucepan bring 1 1/2 cups water to a full boil. Remove from heat and stir in couscous. Cover and let stand, stirring, until water is absorbed, about 5 minutes. In nonstick skillet heat oil, add carrot, pepper, and scallions and cook over medium heat, stirring, until carrot is tender, about 2 minutes. Stir in raisins and apple juice and bring mixture to a boil. Reduce heat to low, stir in tomato and curry powder and let simmer until flavors blend, about 2 minutes. Stir in couscous. Serves 2.
