I have two children 17, and 11 years old. My 17 year old loves eating vegetarian. She is the one who came to me and asked for vegetarian meals. After two weeks of eating veggies I felt and saw a change. I felt so good about the choices of how to eat. My children actually offer to help cut up the food. My husband loves the fresh food. :-) So I realized yeah we have become Vegetarians. I live in Northern Virginia and am excited to be apart of this group. smiles, SunLit This is a recipe I enjoy with several different things, brown rice, or pita with hummus, or with cold pasta. Pico de Gallo Ingredients: 2 cups (canned drained) black beans 4 medium tomatoes, diced 1/2 cup red onion, diced 1/2 cup green onion, chopped 1/2 cup fresh cilantro, chopped 2 Tbs jalapeno pepper, minced (I like to use habanero peppers instead of jalapenos.) 2 Tbs fresh lemon juice 1 Tbs chili powder 1/2 tsp sea salt Combined all ingredients.
