Guest guest Posted May 24, 2008 Report Share Posted May 24, 2008 West Indian Marinade 1 white onion, finely chopped 1 green pepper, seeded and finely chopped 1 scotch bonnet pepper, seeded and finely chopped 2 cloves garlic, minced 1 teaspoon salt 1 teaspoon freshly ground black pepper 1/2 cup stock 1/2 cup white wine vinegar 1 juice of one lime 1 teaspoon sweet paprika 1 teaspoon dried oregano 2 sprigs fresh coriander, finely chopped 2 sprigs fresh parsley, finely chopped In a large bowl, combine all the ingredients to form a paste.
