Guest guest Posted May 28, 2008 Report Share Posted May 28, 2008 Zippy Zucchini Skillet 2 tablespoons vegetable oil 4 medium zucchini, thinly sliced 1 medium onion, chopped 1 16 ounce can whole kernel corn, drained 1 4 ounce can chopped green chiles 2 teaspoons seeded chopped jalapeno peppers 1/4 teaspoon salt 1/8 teaspoon garlic powder 1/2 cup shredded Cheddar cheese Heat oil in a large skillet; add zucchini and onion, and saute 10 minutes or until tender. Stir in remaining ingredients except cheese; cook, stirring occasionally, until thoroughly heated. Remove from heat; stir in cheese. Makes 6 servings.
